Eggs are a good source of protein and selenium, while avocado is a healthy fat that’s loaded with potassium. Both these food are the perfect pair to help keep you feeling full all morning and give your body energy.

I put this blog post together, not because I wanted to write a health essay, but because I need energy and brain power in the morning. You see, when I was younger, I wasn’t a natural morning person. I always enjoyed sleeping in, until at least the third snooze. Then it was a race to get out the door and make sure I wasn’t forgetting anything.
I also use to be a person who hated eating any food before 10:00 AM, (unless it was a cookie). I figured a cookie was better than nothing at all and I do love to bake.
So it took me a long time to find a healthy breakfast that I could enjoy first thing in the morning. These days, I find that the ritual of eating breakfast is as good, if not better than sleeping in. Plus this breakfast of avocado and eggs gives me energy, for real…I’m not kidding.
What’s great about this breakfast is that it pairs well with nuts, seeds or your favorite fruit. On this morning, I’m noshing on my eggs and avocado with pistachios, blueberries and grapefruit. I’ve also added a slice of yummy ciabatta bread toast.
Basically, if you can take 4 minutes out of your morning to poach some eggs, it doesn’t take much effort to add some healthy avocado slices to the plate and eat breakfast. You can even use the avocado in place of butter on your toast and its just so yummy!
