You see, I love trying new recipes, but I hate when I have to buy a ton of ingredients to make one recipe, or if I have to buy special ingredients that I can’t use in something else. I think homemade chocolate chip cookie bars should taste better than anything you could buy in a coffee shop or bakery, and cost a lot less to make at home.

A. A glass Pyrex baking dish works really well, as a metal pan tends to brown the bottom of the chocolate chip cookies bars too much.

A. I don’t recommend using anything except real butter in any cookie recipe.
Q. Does the cookie dough need to be chilled?
A. Even though you’ll be spreading the cookie dough out in one pan to make bar cookies, chilling the dough is recommended.

A. Yes. If you are looking for other way to mix up these chocolate chip cookie bars, you can add in a half cup of chopped nuts, shredded coconut, vanilla chips or butterscotch chips.
- 14 Tablespoons of butter, softened
- 1 Cup brown sugar
- 3/4 cup white sugar
- 2 Tsp. vanilla extract
- 2 Large eggs
- 3 Cups of flour
- 3/4 Tsp. salt
- 3/4 Tsp. baking soda
- 1 Cup semi-sweet chocolate chips
- Cream the butter, brown sugar, white sugar, eggs and vanilla together.
- Stir in the flour, salt and baking soda. Then mix with a cake beater.
- Use a spoon to fold in the chocolate chips
- Spread batter into a greased 9 x 13" baking dish.
- Bake at 350 degrees for 22 to 25 minutes, or until lightly golden brown.
- Cool and then use a pizza cutter to cut into perfect squares.
- If you like more chocolate chips, you can add a few extra.
- If you like nuts, you can add a 1/4 cup of your favorite nuts.
- These bake very nicely in a glass baking dish coated with cooking spray.
I actually think cooking and baking can be therapeutic when you want to get your mind off your worries and onto something good – and these are good!
